Welcome to our aquaculture farm

Deep in the forest of Parnu in Estonia, you will find the 6.4-hectare aquaculture farm which is where the magic happens. It is here that we practise conscious farming. We use modern and traditional techniques that are as ethical and sustainable as possible to protect the welfare of our fish, and the planet. We know that there is more we need to do, and as a small brand, we are truly passionate about our journey to build a sustainable business. As part of the NÖVA community, we want to give you an insight into how we produce our caviar.


Water Sustainability

Like most aquaculture farms, we use a controlled indoor Recirculated Aquaculture System (RAS) which offers a more advanced way to reduce our environmental footprint. It helps us to maximise water quality as well as reduce consumption. To put this in context, an advanced RAS will use just 2% of the water required for traditional land-based aquaculture systems. The system we use has advanced biosecurity to reduce the risk of bacterial infection which means that we don’t have use antibiotics or chemicals to keep the fish free from disease.

Our fish live better lives

All our fish come from and are grown in aquaculture farms, and we take advantage of the purity of our natural surroundings by ensuring that the pure water they swim in is drawn from underground sources. It is no secret that wild Sturgeons are under serious threat of extinction so farming in a sustainable and ethical way is vital so that we do not harm or impact them in their natural habitat. Our aim is to help protect, preserve and regenerate the wild Sturgeon population, not just for us, but for future generations too. If you know about caviar you will know that it is only as good as the fish it comes from, so the purity of the feed is as important as the purity of the water they live in. We use conscious feeds from a company that is committed to the UN Global Compact, the world’s largest corporate sustainability initiative, and one that focuses on positive advancements in amongst other things, the environment. Our high quality and healthy Sturgeon feed has high environmental indexes which means that it does not pollute. It is good for the fish, and good for the water too.

Working towards zero waste

It may surprise you to know that a Sturgeon offers so much more than the roe it produces to make caviar. For example, the meat can be turned into food products. As a new brand, it is so important for us to do what we can to reduce waste and ultimately, our ambition is to be a zero waste brand. That is why today, we are busy building relationships with our local community to share ideas and collaborate so that together, we can ensure that what can be recycled, is recycled.
